My son adds about 1/3 cup lemon juice to his big pot of chicken soup.  Many people rave about it.

Looking for advice on homemade chicken broth & soup. Mine needs a little zing. I used dried Italian spices, fresh celery leaves, peppercorns, & bay leaves along with carrots & onions to make the stock. No salt. The next day I cooked red & green bells & carrots, added the cooked shell pasta & chicken. It's good but I want a Wow! It's great! Soup.

Any suggestions?

This chocolate brownie recipe is absolutely amazing. Deadly good and whenever I have made it for people, large smiles cross their faces! 

 

  1. 350g dark chocolate
  2. 375g butter (it seems like I lot, I know, but use it in order to keep the mixture moist)
  3. 4 eggs
  4. 1 tablespoon salt
  5. 350g all-purpose flour
  6. 100g normal chocolate chips
  7. 100g white chocolate chips

 

Preheat 180 degrees Celsius

Melt the dark chocolate in a reasonably large pot with the butter. Once melted, remove from the stove, cool slightly before whisking the eggs, one by one. You must be very fast so that the eggs don't scramble. Until the mixture has a glossy shine. 

Add the vanilla, salt, sugar, flour and the various chocolate chips. Stir and wait for everything to melt and become one substance.

Place the mixture on a preprepared medium-large deep baking dish and place in the oven until cooked all the way through. Approx 40 minutes. 

Once ready, allow to cool before serving with a dusting of icing sugar!

peaceful oat cookies

  • 1 cup butter
  • 1 cup dark brown sugar
  • ½ cup natural cane sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups unbleached all-purpose flour
  • 2 cups old fashioned oats
  • ½ teaspoon baking soda
  • 1 teaspoon kosher salt
  • 2 cups dark chocolate chips

Directions

Preheat the oven to 350 degrees.

In a mixing bowl, mix together the butter and sugars on the lowest speed for 25 seconds. You want the butter to be a bit lumpy (not creamy). Next add eggs as well as the vanilla and mix for another 30 seconds. Add the flour, oats, baking soda, and salt until it makes a completely mixed dough (mix for about 1 minute). Lastly, add chocolate chips.

Scoop a half a cup of dough onto a greased baking sheet, this should yield 20 cookies. Bake for 18 minutes and enjoy!

Pina Colada Cheesecake Bars

Crust:
1 cup graham cracker crumbs
2 tablespoons coconut flour or all-purpose flour
2 tablespoons turbinado sugar
1/2 teaspoon ground ginger
2 tablespoons butter, melted
1 tablespoon canola oil
1 tablespoon water
Cooking spray

Filling:
1 cup 2% low-fat cottage cheese
1/2 cup sugar
1/4 cup (2 ounces) block-style fat-free cream cheese, softened
1 1/2 tablespoons grated lemon rind
1 tablespoon fresh lemon juice
1 tablespoon pineapple juice
1/2 teaspoon vanilla extract
Dash of salt
3/4 cup egg substitute

Remaining ingredients:
1 cup chopped fresh pineapple
1/4 cup unsweetened shredded coconut, toasted

Preheat oven to 350°.

To prepare crust, combine first 4 ingredients in a bowl. Add butter, oil, and 1 tablespoon water; toss well. Press mixture into the bottom of an 8-inch square baking pan coated with cooking spray. Bake at 350° for 10 minutes. Cool completely on a wire rack.

To prepare filling, combine cottage cheese and the next 7 ingredients (through salt) in a food processor, and process until smooth. Add egg substitute, and process until blended. Spread cheese mixture over cooled crust. Bake at 350° for 33 minutes or until set. Cool for 10 minutes on a wire rack. Refrigerate for 2 hours or until thoroughly chilled. Top with pineapple and coconut. Cut into 16 bars.

These are sooooooooooooooo good !! YUMMO !! :)

Easy Ranch Chicken Waldorf Salad

1/2 cup chopped walnuts
1/2 cup Ranch dressing
4 cups torn Romaine lettuce
2 cups sliced or cubed chicken
2 apples cut into 1 inch chunks
3 ribs celery
1/3 cup sweetened, dried cranberries

Combine dressing, 1/4 tsp. salt, 1/4 tsp. pepper. In large bowl, gently toss lettuce with chicken, apples, celery, cranberries & walnuts.
Serve drizzled with dressing mixture ~

Mexican Shrimp Cocktail

1 large can V-8 juice or Clamato (spicy if desired)
2 avocados, chopped
2 cucumbers, seeded and chopped
1 medium red onion, chopped
1/2 bunch cilantro, chopped
1 jalapeño, seeded and chopped
1 pound large shrimp, peeled, de-veined and steamed *
limes, quartered
Tabasco sauce

Mix all ingredients in a large non-reactive container. Let sit for a few hours in refrigerator, or overnight. Serve with limes and Tabasco sauce.

* Do not over-cook the shrimp, as they will become tough! Serves 4 - 6
