A fast, easy, inexpensive gourmet cole slaw recipe. I've never met anyone who didn't take a second or third helping!
Description:
10 minute gourmet cole slaw using uncooked Ramen Noodles
Ingredients:
One package (14oz) thin sliced cole slaw
4oz sliced almonds
1 pkg Beef Ramen noodle soup mix
3/4 cup sunflower seeds
1/2 cup chopped green onion
1/4 cup rice vinegar or cider vinegar
1/3 cup vegetable oil
1/3 cup sugar
Directions:-Preheat oven to 385
-Combine coleslaw & onion in large bowl; refrigerate.
-Break up Ramen noodles into small pieces on cookie sheet. Mix with almonds & sunflower seeds. Bake dry mixture for 8 to 10 minutes (check at 8 minutes to ensure almonds don't burn).
-Combine vinegar, oil, sugar and Ramen soup flavor packet in small container. Whisk or shake well until sugar blends in.
-Add toasted noodle/nut mixture to slaw.
-Pour dressing and mix well.
-Serve immediately, so noodles will be crunchy!
-Go back for seconds.

PS I added the leftover slaw to canned tuna fish for tasty sandwiches, + chopped celery, chopped jalapeno, mayo and spicy brown mustard. Served on a toasted hotdog bun, like a mini po'boy, with sliced pepperjack cheese. MMMMmmmmmmm.
