This weekend, I have been baking for my "compassionate cakes" project, I wrote about this in a recent blog and I wanted to bake a cake for my dear husband and I had a request for something "pumpkin" from my daughter. So, I go to work baking....1st was pumpkin muffins for my daughter, I put the flour, sugar, baking soda, eggs, pumpkin, etc... in a large bowl. I dropped the glass jar of cinnamon from my cabinet right into my glass bowl with all the pumpkin mixture. The glass bowl shattered! I thought those baking bowls were made of steel : ( I could not salvage that mixture with glass shards all over the place, I dumped it all in the trash and painstakingly tried to get every sliver of glass off the kitchen counter!
My next baking adventure was a "compassionate cake" for a wonderful family. A basic strawberry cake mix with white icing. no problems. hurrah!
Then, I decided to do a carrot cake for my husband. I was mixing everything together and I realized that I had put the pineapple tidbits in without draining them! The recipe calls for the pineapple to be drained. I stirred everything, thought it looked a bit watery and runny, but hoped it would "bake off" in the oven. No such luck, I iced it with cinnamon buttercream icing, put it in the fridge, my husband came home, cut off a nice slab and couldn't eat it because it was NOT cooked because of all that moisture from the pineapple. Oh poo!
I was determined to keep going though! Now, how about pumpkin cookies with browned butter frosting for my daughter! Sure! Did that all Sunday morning, made quite a mess with the sticky and yummy browned butter frosting, getting it on the floor but on the cookies too and she loved them, everyone loved them and enjoyed them with some cold white milk on a fall day!
Back to "compassionate cakes", made a basic yellow cake mix with strawberry icing for a family a few blocks away. No problems. Rejoice!
Planning to switch to an apple cake this week for my husband, not tonight, I am all "caked out" and ready to watch my fav NFL football team!
