Cornbread waffles

Since my "cooked" post, I had a few people ask me about cornbread waffles.
I cook cornbread in a Belgian waffle iron because I don't own a oven and it is fast and nearly fool proof.

My gift today is the recipe for cornbread waffles

Ingredients:

1 3/4 cups cornmeal
3/4 cup all-purpose flour
1 tablespoon baking powder
1 1/2 cups milk
1 large egg
1 can creamed corn
1 small can chopped green chili peppers

Heat up your waffle iron while you mix all of the ingredients together. (Like I needed to tell you that)
spray the waffle iron with a little oil so it won't stick
My waffle iron makes a 7 inch Belgian waffle (The kind with big deep squares) It takes about 2/3 of a cup of this mix to make a waffle without running over. Cook it for about 4 minutes... and pull it off with a fork.
This recipe makes 5-6 if you don't run it over :-)

This is the base for most of our winter time meals. I put it in the bottom of a soup bowl and put all kinds of goodies on top... Pintos, black eyed peas, or any kind of beans, chili, beef stew, turkey or chicken soup....
